Preparation
- Preheat the grill to medium heat.
- Slice the peaches in half, remove the pit, and brush them with olive oil and sprinkle with salt.
- Grill the peaches for about 2-3 minutes on each side until they are caramelized and softened.
- Slice the focaccia bread to create sandwich halves.
Assembly
- Spread cheese on one side of the focaccia.
- Layer the grilled peaches on top of the cheese.
- Add a handful of arugula or mixed greens.
- Drizzle with balsamic glaze and season with pepper and optional herbs.
- Close the sandwich and serve warm or at room temperature.
Notes
If you have leftovers, wrap the sandwich tightly in plastic wrap or foil and store it in the fridge for up to two days. To reheat, pop it in a toaster oven or skillet for a few minutes until warm and crisp again. This sandwich pairs well with a light salad or crispy chips.
