Method
 

Preparation
  1. Preheat the grill to medium heat.
  2. Slice the peaches in half, remove the pit, and brush them with olive oil and sprinkle with salt.
  3. Grill the peaches for about 2-3 minutes on each side until they are caramelized and softened.
  4. Slice the focaccia bread to create sandwich halves.
Assembly
  1. Spread cheese on one side of the focaccia.
  2. Layer the grilled peaches on top of the cheese.
  3. Add a handful of arugula or mixed greens.
  4. Drizzle with balsamic glaze and season with pepper and optional herbs.

Notes
